Kielbasa Pasta

It's Bright Week, so of course cheesy sausage is what's on the menu! What follows is an adaptation of this recipe, mostly tweaks to fit my tastes and preferences. Smoked paprika is my seasoning of the season I think, so it of course makes an appearance! Enjoy!


Kielbasa Pasta

(4 servings)


Ingredients

1 tablespoon of butter or olive oil

300g / 11oz of kielbasa (sliced)

1 medium onion (diced)

5ish cloves of garlic (minced/crushed)

Black pepper (to taste)

Red pepper flakes (to taste)

Salt (to taste)

Smoked paprika (to taste)

285g / 10oz of diced tomatoes

3 cups of broth*

1 bay leaf

375g / 13oz of whole grain pasta**

1/2 cup of sour cream

1 cup of cheddar cheese (shredded)

3 green onion stalks (chopped)

Parmesan (to garnish)


*I generally use chicken or vegetable broth.

**I like farfalle or penne personally, but anything not too big would work.


Directions

1) In a large pan heat the butter or olive oil over medium heat and sauté the onion and kielbasa until the onion is translucent and soft.

2) Throw the garlic and other seasonings in and sauté for another half minute or so. (I usually leave the salt till the end - depending on the other ingredients you're using you may or may not need to add any.)

3) Stir in the diced tomatoes and cook another minute or two.

4) Add the broth and bay leaf to the pan, bring everything to a boil, then add the pasta of your preference and cook to your desired tenderness.

5) Remove the pan from the heat and stir in the sour cream, cheddar, and green onion. Serve as is or with a sprinkling of parmesan and/or more red pepper flakes, and enjoy!
