What follows is my adaptation of this lovely recipe, which I came across a bit ago while wasting time on Instagram. I adapted the original to better fit my family's tastes. So far our favorite version has involved Chinese sausage, but it's a flexible recipe that can be made to fit both carnivorous and vegetarian tastes alike. I hope you like it as much as we have!
Golden Fried Rice with Chili Crisp
(2 servings)
Ingredients
2 cups of rice*
2 large eggs (separated)
2 1/2 tablespoons of chili oil (separated**)
5 cloves of garlic (minced/crushed)
2 green onions (sliced - separate whites from greens)
1 cup of frozen peas 'n carrots (defrosted)
Meat (if desired)
1 tablespoon of chili crisp (or to taste)
1 tablespoon of light soy sauce
White pepper (to taste)
Roasted sesame seeds (to taste)
*Already made, preferably a day or two before.
**Keep 1/2 tablespoon aside.
Directions
1) Mix the rice and the egg yolks, prepare your other ingredients, and set aside. (I put everything in the order it's going into the wok to makes things easy later, but to each their own!)
2) Heat the half tablespoon of chili oil over medium-high heat in a wok or pan and stir fry the egg whites until scrambled, then set aside to add back in later.
3) Add the remaining chili oil, throw in the white parts of the green onions together with the garlic, and stir fry for another minute or two until fragrant.
4) Throw in your peas and carrots and the chili crisp and stir fry another couple of minutes. I like my veggies tender, but to each their own! This would also be the point to throw in some cubed chicken, a bit of pork, et cetera, if you're using uncooked meat.
5) Toss in the golden rice and stir fry for another minute or two until all the grains have had a chance to cook a bit.
6) Pour the soy sauce over the fried rice, stir to combine, and after about a minute remove everything from the heat. (If you're using cut up tofu puffs or some diced Chinese sausage as your protein, throw them in right after the soy sauce.)
7) Stir in the powdered white pepper and some of the green onion greens, then dish up, garnish the bowls or plates of fried rice with the remaining green onion and some sesame seeds, and enjoy!
