Long time no see! Needless to say, it's been a crazy couple of years! And now it's 2020, so everything's super chill and fine...yeah...
Anyways - moving on! - this has long been a favorite recipe of mine, modified from this recipe. I've occasionally added greens like spinach or even peas or small broccoli florets to the sauce to make things a little chunkier (and healthier?), but it's divine as is!
If you're a meat lover, follow the first step from the original recipe linked above, then proceed as follows below!
Vegetarian Lasagna
Ingredients
1 tablespoon of olive oil
1 medium-sized onion (chopped)
4 to 6 cloves of garlic (minced)
32-ounce jar of spaghetti sauce
Basil (to taste)
Parsley (to taste)
32-ounce container of cottage cheese
3 cups of shredded mozzarella
2 eggs
1/2 cup of grated parmesan
1 tablespoon of dried parsley
Pepper (to taste)
Salt (to taste)
9 whole grain lasagna noodles
1/4 cup of water
Directions
1) Lord, bless!
2) Heat the olive oil in a pan over medium-high heat and sauté the onions until translucent.
3) Add the garlic and cook until the onions begin to brown, then add whatever herbs you think will enhance the sauce (basil and parsley are my go to's) and sauté another minute.
4) Add the spaghetti sauce to the pan and simmer on low heat and set the oven to 350 degrees Fahrenheit (175 degrees Celsius).
5) While the sauce is simmering combine the cottage cheese, 2 cups of the mozzarella, eggs, 1/4 cup of the parmesan, parsley, salt, and pepper in a large bowl.
6) Once everything's mixed, get a 9-inch by 13-inch baking dish and evenly spread 3/4 cups of the spaghetti sauce over the bottom. Cover the sauce with 3 lasagna noodles, 1 3/4 cups of the cheese mixture, and 1/4 cup of sauce. Repeat the layers once more, then top with the last 3 noodles, the remaining sauce, 1 cup of mozzarella, and 1/4 cup of parmesan.
7) Add 1/4 cup of water to the corners of the baking dish and cover with aluminum foil.
8) Once the oven is ready bake the covered lasagna for 45 minutes, then uncover and bake another 10 minutes before removing it from the oven.
9) Let the lasagna stand another 10 minutes before slicing and serving, and enjoy!
