Basic Quiche

 I just realized I never got around to posting my longstanding basic quiche recipe, which I 100% lifted from this website. (No doubt why I never get around to typing it up here!)


Basic Quiche

(16 servings*)


Ingredients

2 frozen pie crusts** (23cm / 9in)

1 tablespoon of butter

1 medium onion (chopped)

4 to 6 cloves of garlic (crushed)

Basil (to taste)

Parsley (to taste)

Pepper (to taste)

5 eggs

3/4 cup of milk

1/4 cup of sour cream

1 cup of shredded cheese (dealer's choice!)

1/2 cup of parmesan

1 cup of other fillings (dealer's choice again!)


*If an eighth of a quiche counts as a serving!

**Or make your own if you're a superstar!


Directions

1) Set your oven to 175 degrees Celsius - or 350 degrees Fahrenheit if you're in the one country in the world that's stuck with Fahrenheit - and pre-bake your crusts for 5 minutes. (This will help you avoid an undercooked center.)

2) Pull out a small pan and melt the butter over medium heat, sautéing the onion once the butter's melted until soft and translucent.

3) Stir in the garlic, sauté for another couple of minutes, then add your seasonings and sauté for another minute until fragrant before removing the pan from the heat to cool.

4) While the fried onion and seasonings cools combine the eggs, milk, cheese, parmesan, and other preferred fillings in a large bowl. (I like a cheese mix including at least some cheddar and a cup of spinach, but bacon, broccoli, chicken, et cetera, have also worked well in the past.) Stir in the fried onion once it has cooled sufficiently.

5) Pour the whole shebang into your pie crust and bake for 50 minutes or so. (When a knife inserted in the middle comes out clean, you're set - literally and figuratively!)

6) Serve as is, with some salad, or whatever other beloved quiche accompaniment you're craving, and enjoy!
