This is one of those generically Asian - maybe Southeast Asian? - recipes that came together when I was trying to make a meal healthier in spite of the unhealthy things I'd already done to the main...and also I wanted to use up the ridiculous number of tomatoes we had in the fridge at the time. Suggestions are very much welcome! It was a hit as is, but I feel like it's missing something...
Tomato Salad with Fish Sauce
Ingredients
2 medium tomatoes (sliced)
2 teaspoons of kecap manis
2 teaspoons of rice vinegar
1 teaspoon of fish sauce
1/2 teaspoon of roasted sesame oil
Sliced green onion (to garnish)
Roasted sesame seeds or furikake (to garnish)
Directions
1) Thoroughly combine the kecap manis, vinegar, fish sauce, and sesame oil and set aside.
2) Prepare the tomatoes and green onion.
3) Arrange the tomatoes as artistically or chaotically as you like on a plate, pour over the sauce, and garnish with the green onion and the roasted sesame seeds (or furikake). Serve as is for a light lunch, party of one, or with whatever Chinese/Thai/Vietnamese/whatever other dishes you've already prepared, and enjoy!
