Lazy Day Blueberry Pancakes

This is truly the laziest of lazy day recipes once you've moved past a bowl of cereal or DoorDash! Super easy, super yummy, and quite flexible if you want to add extras!


Lazy Day Blueberry Pancakes


Ingredients

1 egg

2/3 cup of milk*

Powdered cardamom (to taste)

Powdered cinnamon (to taste)

Powdered ginger (to taste)

1 cup of blueberry muffin mix

Butter or canola oil**


*Your call! I generally use whole milk, but I've used skim milk, oat milk, et cetera, will equally lovely results!

**I like salted butter myself, but a neutral cooking oil would work just as well.


Directions

1) Whisk the egg, milk, and spices together. Feel free to omit the spices, they truly are to taste! (Mine, in this case!)

2) Stir in the muffin mix, being sure to deal with any big clumps. (The result isn't always 100% smooth, but sorts itself out in the cooking.)

3) Heat a medium or small pan with a little butter or oil over medium heat, then pour about 1/8 cup of mix in and allow it to spread thinly over the pan. The result is somewhere between the standard North American pancake and a crêpe and is quite lovely. Flip once air bubbles have appeared on most of the surface of the pancake. If the bottom is already overly dark at this point, then turn your heat down a little, the pancake should be a lovely brown, not close to burning. Add more butter or oil as needed to keep the pancakelettes from sticking.

4) Serve as is - the epitome of a lazy day! - or with topped with your favorite syrup, rolled around a bit of jam, whipped cream, or other filling, and enjoy!
