Massaman Curry with Beef

This is another of Pailin's excellent recipes, which I'm posting here to record the modifications I made to fit the brand of curry paste available to me and my family's personal preferences. We absolutely love massaman curry, and this recipe in particular - I strongly recommend checking out Pailin's original recipe for a fuller version!

Satay Soup with Buckwheat Noodles

This recipe is a bit 'northeastern China meets Southeast Asia,' but I'm so glad the two did meet, 'cause the results are delicious! I used Jeeca's lovely recipe as a base, but obviously made a few changes to bring forward some Thai and Chinese elements. Recipes are only ever guides, not laws, so feel free to play with mine as well if you like!

Thai-style Pumpkin Soup with Shrimp

In my family it's a tradition to have pumpkin soup on New Year's in honor of Haitian Independence Day. Due to my limited access to certain ingredients over the years I've played around with my recipe quite a bit. What follows is my favorite experiment so far (a slight adaptation of this recipe), and possibly my recipe from here onwards despite its distance from more traditional Haitian recipes. I hope you like it as much as I do!

Pumpkin Chickpea Stew

Can you guess what I have a lot of in my pantry right now? If you guessed chickpeas, you would be correct! What follows was loosely based on this recipe, but I took some liberties with the ingredients and preparation, as always. (I mean, come now, TWO cloves of garlic? Just 'cause you're white doesn't mean you have to embrace bland!)

Massaman Curry Tofu

I loved all things Thai long before I first got the chance to visit Thailand, and massaman curry chicken has been a favorite among favorites. I was reminded recently of how long it's been since I had massaman anything, and so I decided to slightly adapt this recipe to take it from carnivorous to vegan. Crock-pot Jamaican Red Bean Soup

Birhane Silase Marley, Rastafarianism, and Ethiopian Orthodoxy have come up a couple of times in the last week, so I thought it would be appropriate to make something from Jamaica for dinner this week! I found this recipe intriguing as it combined a few things I'm not sure I would've mixed on my own, and I'm quite pleased by how it turned out! What follows is my modification of this recipe, which didn't require much tweaking to make it crockpoty awesomeness.
