Easy Potato Salad with Sesame

Some days there's time to do a recipe...but most days there's not. This is definitely a recipe for one of those latter days! It's vaguely based on Korean Bapsang's lovely potato salad recipe, but with so many modifications that I hesitate to attribute this to her. Definitely try hers out if you want something more authentically Korean! And if you want to try a vaguely East Asian-inspired potato salad recipe, then try out mine. Either way, enjoy!

Kimchi Jjigae with Potato

I'm a big fan of all things Korean, but I've got a somewhat North American aversion to soft tofu - sometimes I like it, oftentimes I don't. As a result I've adapted Maangchi's and The Korean Vegan's kimchi jjigae recipes to drop the tofu and up the potato, which resulted in a new family favorite! Green Borscht

Green borscht is a much less well known part of the borscht family, one I've long wanted to give a try! I wasn't able to source all the authentic ingredients where I live, so I've written my recipe with the necessary substitutes. Northeastern Chinese-style Braised Squash

This comforting, hearty recipe is my adaptation of Old Northeastern Cuisine's great recipe for northeastern Chinese braised squash with pork (肉片炖板栗瓜 / ròupiàr dùn bǎnlì guā). The original recipe is worth a try, but I've made some adaptations to make the dish match one of my favorite lunches from my days teaching at public schools in Manchuria. That version also had pork (pork knuckle) and often had chunks of corn on the cob too, but I've gone for a somewhat simplified dish easy to make on any weeknight. If you're wanting that extra bit of protein, then replace the vegetable oil in my recipe below with some ground pork, sautéing it until it's thoroughly cooked through before proceeding with the recipe. Whatever you do though, I hope this comfort food favorite of mine hits the spot for you too!

Maen Gamja Jorim

This gorgeous recipe for spicy Korean-style braised potatoes largely comes from Aaron and Claire's wonderful YouTube channel, with minor adaptations to make for a quicker weeknight dinner. With slight changes this was an incredibly easy, delicious recipe. It's usually served as a banchan (side dish) at meals in Korea, but it works beautifully as a main over rice. It was an instant hit in my family and medium-hot for us, but if you're not good with spicy food consider dialing back the hotter spices - the flavors won't be the same, but you'll be less at risk of burning up too! 

Beef Keema Aloo

I grew up eating South Asian food, but I often find making it myself to be a daunting task given the number of ingredients, toasting spices, and on and on. I appreciate the results, but often don't want to be responsible for them myself. That being the case, this simplified recipe for beef keema aloo (with some adaptations of my own) has become a favorite weeknight meal as it doesn't require a lot of extra steps or time to throw together. My apologies to any South Asian readers out there, I know this recipe is probably far from what it should be. It's a nice shortcut to a delicious weekday dinner, however, and I hope you enjoy it as much as my family does!

Slow Cooker Split Pea Soup

This is another blend of a couple of recipes, from here and here. Ham seems to be a popular add-in to split pea soup in North America, but more often than not I make it as below for days when I'm vegan. I think this recipe is delicious as is, but feel free to add some ham or bacon if you're wanting that richer flavor in the end product!

Basic Borscht

Borscht is a nostalgic dish for me, something that always brings back memories of days spent at my godmother's house, where there would often be a giant pot of borscht bubbling away on the stove. She was from an area in southern Russia very close to what today is southeastern Ukraine, so her borscht was a bit different from what's more often considered standard by Russians and Westerners alike.

Vegetable Paprika Stew

I tried out this lovely vegetable paprika stew this week as part of my efforts to make my Lenten eating a bit healthier and reduce how much takeaway I eat. (It's one thing to get food delivered when my workday is hectic, but when it's my day off I really have no excuse!) I was working off of this recipe, but as I discovered at the last minute that I was missing key ingredients and in possession of others (namely a bottle of red wine from the weekend) I had to tweak it a bit. I hope you enjoy the results as much as I did! This recipe made eight good-sized portions, so if you're not wanting lots of leftovers you might considering halving the recipe.

Shimbra Atkilt

It's Lent again in the Orthodox world and since the last half of my work week is much busier than my first I've been trying to cook ahead so that I have meals ready to go when things get busy later this week. This particular dish is an adaptation of one of my favorite Ethiopian dishes, atkilt. (And who knows, it may not be original. I never had something like this in Ethiopia, but chickpeas and atkilt are both popular there...)

This is one of my all-time favourites from growing up in the Horn of Africa, and a relatively simple dish too if you disregard all the chopping. It's a comfort food for me, and also a good way to get more vegetables into your diet if you're not a big salad eater.

I can't believe how long it's been since I posted anything! In my defense, life picked up pace just before old style Nativity and has remained somewhat hectic since as I prepare to move. That plus the end of the Advent Fast has meant I haven't been so much cooking as slathering cream cheese on things and pouring eggnog ;-).
