North American-style Pancakes

Here is my preferred recipe for fluffy North American-style pancakes. Enjoy!

Kimchijeon

Kimchijeon (김치전) or savory kimchi pancakes are a beautiful dish and have long been a family favorite. My recipe is largely the Korean Bapsang recipe with a touch of influence from Maangchi's version. I usually make my jeon in a wok and tend to make them on the smaller side (I really enjoy the crispy edges!). Even so, about three kimchijeon fill me up if I'm making a meal out of them. I've also seen larger, pizza-sized jeon as well though, so do as you feel led, and enjoy!

Korean Vegetable Pancakes / Yachaejeon

I have long loved Korea's beautiful array of savory pancakes, but this veggie version has become my go to for a quick 'n easy fix suitable for any time of the day or week. What follows is primarily Maangchi's beautiful recipe, but I also got the idea for a crispier result from the use of cornstarch in Jeeca's recipe. Feel free to use what's below or to make your own adjustments, and enjoy!

Lazy Day Blueberry Pancakes

This is truly the laziest of lazy day recipes once you've moved past a bowl of cereal or DoorDash! Super easy, super yummy, and quite flexible if you want to add extras!

Apple Pancakes

A lovely, simple apple pancake recipe, adapted from this recipe. (I mostly beefed up the spicing, which was deeply lacking.) A bit on the moist side for my preference, but wonderful all the same. Enjoy!

German Pancakes

I made this for brunch for the Nativity this year and it was just lovely! The interior texture reminded me of breading pudding - I may just add raisins the next time I make this! And so much nicer to throw this in the oven than to stand by the hot plate making regular pancakes and either eating them right there or eating cold pancakes by the time they're all cooked!

Quebecois Potato Pancakes

This potato pancake recipe is a blend of the recipe for 'crêpes à Nicole' from Julian Armstrong's delightful A Taste of Quebec cookbook and a couple of recipes for potato pancakes from online.
