Kimchi Jjigae with Potato

I'm a big fan of all things Korean, but I've got a somewhat North American aversion to soft tofu - sometimes I like it, oftentimes I don't. As a result I've adapted Maangchi's and The Korean Vegan's kimchi jjigae recipes to drop the tofu and up the potato, which resulted in a new family favorite! Sweet Potato, Black Bean, 'n Corn Stew

Necessity is the mother of invention, and in this case necessity was clearing out more of our pantry and freezer. And I sure am happy it was, because I stumbled across this great recipe and then realized it was similar to one of my favorite salad recipes. The resulting fusion is a gorgeous cold weather version of my salad recipe, and makes a hearty, excellent vegan, vegetarian, or meaty meal depending on how you make it!

Chicken Peanut Stew

This is inspired by West African peanut stew, which I first encountered in university thanks to a lovely Ghanaian friend. Since then I've only made it on occasion, but I've always been delighted when I have! The following is an adaptation of this recipe, updated in August 2026.

Crockpot Chicken Pot Pie Stew

This recipe is chicken pot pie meets crockpot, and definitely results in awesomeness! It's especially lovely on a cold winter night. I only have a small crockpot (same size as an Instapot), but this recipe fits it well. The original recipe can be found here, while my somewhat modified recipe is, of course, below. Enjoy!
