Classic(ish) Deviled Eggs

This is yet another one of those 'I've made this forever, but I don't want to forget my favorite way of doing this' recipes. Deviled eggs were a childhood favorite that I don't eat every day solely because I hate peeling hard-boiled eggs - if it weren't for that they'd probably feature at most of my meals! I love the flavor the vinegar, dill, and smoked paprika bring to the end result, but if you're tired of this general variety of deviled eggs, then definitely give my Asian(ish) version a try instead!

Corn n' Egg Drop Soup

This is a variation on another old Cantonese favorite, in this incarnation an adaptation of Meet the Chows' straightforward recipe. It's great as part of a set of dishes, a starter, or even on its own when you're short on time and not too crazy hungry. (A scoop of rice would no doubt help in that last scenario!) It's simple yet very moreish at the same time. Enjoy!

Deviled Eggs with Soy Sauce 'n Sesame

I will never not crave deviled eggs, but even I occasionally tire of the divine dill (gasp! I know!!!) deviled eggs I usually make. The other day I started pondering what a vaguely East Asian deviled egg would taste like...and then I did some googling and came across Eric Kim's awesome recipe and it just had to be! What follows is mostly his recipe, but with a couple of adaptations to make it better fit my family's tastes. If you love deviled eggs as much as I do definitely give this a try, I don't think you'll regret it!

Green Borscht

Green borscht is a much less well known part of the borscht family, one I've long wanted to give a try! I wasn't able to source all the authentic ingredients where I live, so I've written my recipe with the necessary substitutes. Bacon Cheddar Egg Bites

This is a pretty easy, straightforward recipe to make healthy (healthier? healthy-ish?) egg bites à la Starbucks inspired both by my love for Starbucks' egg bites and my sister's own experiments in egg bite-making. What follows is my favorite, but changing out cheeses and/or meats or even popping a bit of broccoli in likely would go awry. I'm very much looking forward to experimenting with this recipe myself. As it is, tomorrow's 5am breakfast will be a much less enervating affair than such things usually are!

Chicken Fried Rice

Fried rice - what's not to like? I wish I could say my fried rice recipe comes from my Chinese mother-in-law or a good Taiwanese friend, but alas it's just the result of my experimentations over the years. This recipe is nothing fancy, but it's a lovely weekday go to when there's leftover rice on hand in the fridge. If you have any suggestions, please feel free to leave them in the comments!

Salsa Scrambled Eggs with Sausage

 I'm sure there a million much better, more authentic versions of this out there, but this was born from a craving for a fusion of the pre-Lent indulging going on right now, Tex-Mex, and my favorite Chinese breakfast, xīhóngshì chǎo jīdàn. (Which is not a breakfast dish per se, but became a go-to breakfast for me when I was living in Manchuria.) I hope you enjoy what resulted as much as I do!

Chinese-style Tomato Scrambled Eggs

Although I live in China, I don't cook much Chinese food because of how easy it is to get great takeout here. I do make a couple of simple dishes, however, when I'm not feeling like agonizing through a Mandarin-language phone call to one of the nearby restaurants for delivery or going out to pick up takeout from one of those same restaurants. (Laziness is sometimes a good thing!)

Vegetable Rice with Sausage and Egg

I've been trying to economize these last couple of months - for economizing's sake, thank goodness - and a variation of what became this was suggested by a friend when I complained about being tired of fried everything. If you've lived in the PRC, you know how cheap the ingredients are! And you've probably also used them (in combination with various other things) in countless fried rice and fried noodle dinners. It's so nice to have an alternative - not a big change up, but enough to keep me
from getting tired of all the rice! (I know, I know, I'm far from enculturated. I recently had a new coworker begin our first conversation with, 'Do you like rice? I love rice. I only eat rice!' In the past I would have dismissed such a story as stereotyping, but I have yet to meet someone here who thought a proper meal was complete without rice...)

Ethiopian Chicken Stew / Doro Wot

An oldie but a goodie from Ethiopia! Chicken is expensive there (or was when I lived there), so this would normally be served around the holidays, the Nativity and Pascha especially. Any day's a good day for ዶሮ፡ወጥ (doro wot) though, and since I was in need of a pick-me-up I decided to try my hand at this. (It's been a long time since I made it last.) Sausage Shakshuka

This is my new favorite way to do eggs for breakfast! Scrabbled eggs haven't been sitting well with me for whatever reason, but shakshuka - served with a nice flatbread - is the perfect mixture of eggs, sauce, and bread. It'd make a good dinner meal too, perhaps with some rice or couscous. Heck, it'd make a good anything - I'm seriously tempted to go get another batch of ingredients from the store so that I can have shakshuka for breakfast again tomorrow!
