An easy, delicious meal for any hour of the day (or night!). There's a wonderful sesame paste noodle recipe as well, but for the time being here's my favorite peanut butter version. These noodles make veganism look easy (I never even realized they were till a few times into making them!), and work great any time of the year. In the winter I put the sauce straight on the steaming, drained noodles, and in summer I give the noodles a cold water rinse before mixing. Hot or cold, they're delicious!
Spicy Peanut Butter Noodles
(2 servings)
Ingredients
150g / 5.25oz of dry noodles*
1/2 cup of hot noodle water
6 tablespoons of peanut butter
1 1/2 tablespoons of sweet soy sauce
1 1/2 tablespoons of soy sauce
1 1/2 tablespoons of black vinegar**
1 or 2 cloves of garlic (crushed/minced)
Chili crisp (to taste)
Sliced cucumber*** (to garnish)
Chopped green onions (to garnish)
Roasted sesame seeds (to garnish)
*Sliced noodles are my absolute favorite for this dish, but plain ramen or really any noodle will do in a pinch.
**Use rice vinegar if need be.
***I don't bother if it's wintertime, but they're a great addition to cold peanut butter noodles in the summer heat!
Directions
1) First get your noodles cooking according to the instructions on the package.
2) Reserve some hot water from the noodles, thoroughly combine it with the peanut butter, and then stir in the soy sauces, vinegar, garlic, and chili crisp.
3) Drain your noodles, mix in the sauce, garnish with green onion and sesame seeds (as well as cucumber if it's summertime), and enjoy!
