Here is my preferred recipe for fluffy North American-style pancakes. Enjoy!
North American-style Pancakes
(8 servings*)
Ingredients
1 1/2 cups of all-purpose flour
1 tablespoon of sugar
2 teaspoons of baking powder
1/2 teaspoon of salt
Cardamom (to taste)
Cinnamon (to taste)
1 1/4 cups of milk
1 egg
3 tablespoons of melted butter or vegetable oil
2 teaspoons of orange blossom water
1 teaspoon of vanilla
Butter or vegetable oil (as needed)
*Eight small pancakes. This usually feeds the two of us well with one or two leftover for snacking later, but if you like bigger pancakes or have a lot of people to cook for, plan accordingly!
Directions
1) Mix the dry ingredients (flour, sugar, baking powder, salt, and spices) in a large bowl.
2) Combine the milk, egg, butter or oil, orange blossom water, and vanilla in a small bowl, then gently stir into the dry ingredients.
3) If you're not using a no-stick pan, heat some vegetable oil over medium-high heat, then turn the heat down to medium-low and pour a quarter cup of batter in at a time and cook for a couple of minutes (or more if necessary) on each side until golden brown, adding oil and/or butter as needed. Repeat until all the batter is used up.
4) Serve as is or with a bit of butter and maple syrup, and enjoy!
